Purpose of the Section

The Department of Gastronomy and Culinary Arts offers the opportunity to work academically and scientifically with a student-oriented approach, as well as educating chefs who best understand, develop and promote the traditional Turkish culinary culture. Based on the principle that gastronomy is both a science and an art, it is aimed to convey the socio-cultural and artistic aspects of the cuisine to the gastronomy experts of the future, as well as the approach that makes a difference based on the basic scientific teachings such as food sciences, food technologies, food hygiene, and the spirit of teamwork. While emphasizing that nutrition is not just about filling one's stomach or enjoying food, our department trains gastronomes who know the importance of good nutrition in ensuring a healthy life and preventing diseases and reflect this awareness. Istanbul Rumeli University Gastronomy and Culinary Arts Department trains qualified chefs who are equipped with the necessary knowledge and skills and can compete in the international arena.

 

A 4-year undergraduate education is given in the Department of Gastronomy and Culinary Arts, whose language of instruction is Turkish. Benefiting from positive sciences and social sciences, Istanbul Rumeli University Gastronomy and Culinary Arts Department has a multidisciplinary education program in which food and beverage culture is intertwined with science and art. In addition to applied training, the department offers a qualified education with courses such as basic art education, healthy nutrition, food technologies, food hygiene and sanitation, occupational safety, entrepreneurship, marketing and sales methods, accounting and cost control. In practical lessons, basic cooking techniques in practice kitchens, Turkish cuisine culture, Ottoman cuisine culture and world cuisine cultures are discussed with scientific, historical and cultural dimensions, and preparation and presentation techniques are shown.
Students, if they wish, have the right to choose courses from different faculties and departments of our school, with a maximum of two courses from outside their departments. With seminars, interviews, technical trips and career days to be organized during the education period, students will increase their knowledge and experience and will be able to come together with the human resources of the institutions they want to do internship.

Gastronomy experts can master all the processes that traditional Turkish and World cuisine trends have gone through from history to the present. They can produce the product they have designed with the theoretical knowledge they have acquired in food sciences in the most accurate and healthiest way. It can undertake the vision of promoting Turkish cuisine in the international arena, raising the position of our country in the rapidly developing gastronomy tourism all over the world and ensuring its adoption. In addition to existing culinary trends, students can contribute to the gastronomy culture by creating original designs in line with their own abilities. Students of Istanbul Rumeli University Gastronomy and Culinary Arts Department, who have successfully completed their undergraduate education, will be able to continue their professional lives as successful individuals who can make a qualified academic career, as well as being a conscious entrepreneur after completing their master's degree.

Those who want to work as a gastronomy specialist in the sector by choosing the Gastronomy and Culinary Arts Program should have a good grasp of the structural characteristics of foods, the changes and processes they undergo in the process from field to table. They should be able to make sensory and characteristic analyzes of foods, and internalize all the principles of food and cooking. Gastronomy is also a culinary art and while practicing the profession of gastronomy specialist, one should consider the basic art principles, colors, lights, textures of the materials used and their harmony with each other. He should always be disciplined and responsible, give utmost importance to both kitchen hygiene and personal hygiene, and apply international standards in hygiene in the best way possible. He should constantly follow the innovations in his field, be open to change and development, have leadership qualities and have strong communication skills.

Thanks to their undergraduate diploma, our students can work in five-star hotels, food and beverage businesses, private restaurants, aircraft services businesses and the kitchen areas of ships by preparing delicious presentations or open their own businesses. They can work as instructor chefs in culinary schools and culinary academies, make TV shows in the media, become food photographers or critics. Graduates can also work as academicians by taking postgraduate education.

Our students in the Department of Gastronomy and Culinary Arts at the Faculty of Art, Design and Architecture can certify their qualifications with diplomas and certificates by improving themselves during their education period with double major and minor programs if they meet the necessary conditions. They have the right to receive a bachelor's degree in two different fields in the departments they can choose in accordance with the relevant regulation, such as the double major program and "Radio, Television and Cinema". Students enrolled in the Gastronomy and Culinary Arts Department undergraduate program can obtain a certificate by completing some courses from a different department at our University simultaneously and successfully, and by increasing their knowledge in a different field with minor programs.

General English lessons are given by distance education. Students whose general English level is B1 according to CEFR, (Istanbul Rumeli University) Continuing Education Center can request Career English courses. Career English courses open the way for students to follow the necessary information in their fields in international language and to search for foreign job opportunities.

The Department of Gastronomy and Culinary Arts sends students to universities in Turkey and abroad within the quota every year within the scope of the exchange program (Erasmus) managed by Istanbul Rumeli University International Relations Office and accepts students from partner universities within the scope of the protocol.

Students of Istanbul Rumeli University Gastronomy and Culinary Arts Department are supported by certificate programs given by the Continuing Education Center throughout their education period. The certificates to be issued follow the legislation program updates. Students who successfully complete their certificate programs transition to professional business life with the equipment needed at the graduation stage. Although it is updated every semester, there are certificate programs such as hygiene training, halal food training, gastronomy trends and advanced appetizers for those working in the food industry.

Due to the practice-oriented nature of our department, there are two compulsory summer internships. Due to the importance of applications in the technical field, our students have to successfully complete their internships. In these internships, it will be ensured that they get to know the business areas related to the departments they study, learn the activities in the workplace and apply the knowledge and skills they have acquired through education and training by doing practical work.

Students related to internship can do internship in enterprises, institutions and organizations that they determine or are recommended by the University and that meet the conditions within the framework of the regulation. Students, if they wish, will be able to benefit from internship opportunities by coming together with the human resources of the institutions they want to do internship, thanks to the seminars, interviews, technical trips and career days to be organized during the education period.
