Istanbul Rumeli University’s Department of Gastronomy and Culinary Arts organized a comprehensive sectoral visit to the Algida factory in Çorlu, which boasts the highest ice cream production capacity in the world. This event aimed to provide our students with practical experience in food production and to transform their theoretical knowledge into practice.
During the visit, our students first received detailed training from the factory's safety and hygiene experts. This training covered the safety protocols, hygiene standards, and emergency procedures that must be followed in the workplace. After the training, the students donned sterile clothing and proceeded to the production area.
Accompanied by the factory's food engineers, the tour provided a detailed overview of all stages of the ice cream production process. Information was given on all processes from the beginning of the production line to packaging, including the technologies used, quality control points, and practices to enhance production efficiency. The students had the opportunity to observe all stages, from the selection and preparation of ice cream ingredients, to the processing of the mixture, pasteurization, homogenization, freezing, and packaging.
After the tour, our students were offered various refreshments by the factory as part of their hospitality. During these refreshments, the students had the chance to relax and reinforce the information they had learned. Additionally, interactive conversations with experts provided important insights into industry innovations and future career opportunities.
